This is a winner of a recipe if you want a fuss free impressive end to your family holiday gathering. Make it ahead and serve when you need it. Make the most of lovely seasonal fresh cherries for a festive dessert.
Ingredients

500 grams fresh cherries

600ml cream
-
8 egg yolks
-
115 grams honey
-
60 mls brandy
-
1/2 teaspoon ground cinnamon

1/4 teaspoon ground cardamom

2 tablespoons lemon zest
Directions
Put a 25cm x 9cm loaf tin in the freezer
Wash and pit the cherries and cut into quarters. Save some for serving.
Whisk the egg yolks and honey over a pan of simmering water until they thicken and go a pale colour
Whip the cream until stiff and fold in the egg yolks and honey
Fold in the lemon rind, spices, cherry and brandy
Pour into the loaf tin - don't bother lining line it with glad wrap or paper
Freeze and remove 10 minutes before serving and slicing.

Recipe Note
Let it thaw for 10 minutes before cutting and serving. You can also use canned cherries with this recipe just drain them well and reduce the amount of brandy or it will be too sloppy and freeze crystalised.
